Take on Taco Tuesday

We love Taco Tuesday and I've pretty much trained everyone to expect so... what to do when you're on a "more veggie, less chipy" kinda program.  Well, thankfully I saw this idea at Whole Foods and everyone actually loved it.  I heard one "are we having chips?" to which I said that we weren't and that was that.  Everyone loved it!  Threw on my Beach House Apron, and we did rice for those who wanted rice and iceberg lettuce as the base if you didn't.  Then, piled on the veggies and meat - bell peppers in all the colors, poblanos, cilantro, onions, avocado, salsa, black beans, cheese and queso, of course.  So, so good and way healthier, too.
